We are so addicted to Fishcakes and not the English version with potato but the Caribbean ones with Salt fish (salted cod).
Commonly called Fishcakes in most Islands, Accra in Trinidad or salt fish fritters in Jamica , however we are EC (eastern Caribbean) so we calling them fishcakes. Fishcakes is soked saltfish deep fried in a spicy batter.
We know Bajans love them, and from Dominica right the way to Grenada they all have their own special recipe.
Ingredients:
1 cup onions, finely chopped
1 cup sweet pepper, finely chopped
½ cup whole kernel corn, drained
½ cup green onions, or chives, chopped
1 scotch bonnet pepper, seeds removed and diced, or 1 tbsp Bajan peppersauce
1 cup flour, sifted
1 tbsp baking powder
Salt and Pepper to taste
2 tbsp melted butter
2 tbsp oil plus oil for frying
1 egg, lightly beaten
½ cup milk
1 lb salted cod fish, cooked and flaked
Directions:
Soak salted cod fish in water for at least 4 hours, and preferably overnight, changing water a minimum of three times.
In a heavy pan heat the oil and sauté the onions and sweet pepper until soft. Set aside. Sift the flour, baking powder and salt/pepper in a bowl. Make a well in the centre and pour egg, milk and butter and mix together lightly. Fold in cooked onions, sweet peppers, hot pepper, corn, chives and fish. Batter should be thick and slightly lumpy. If the batter is too watery, add sifted flour to achieve the desired consistency.
In a large deep pan or deep fat fryer, heat cooking oil to a temperature of 340 degrees F. Drop batter by the tablespoon into hot oil but do not crowd. Cook until golden brown and drain on paper towels.
My Mum made these:
Gotta love the hot pepper sauce

De Tropix
Following on from all things tropical. I came across this duo De Tropix, you may know the singer Cherry B as Mia’s hype girl with Producer & Vocalist Instinct. Hailing from St Vincent and the Grenadines the Island that brought you Jamsey P ‘Nookie tonight’ with a remix with Mia and Kevin Lyttle’s 'Turn me on'. So it’s no wonder the sound of De Tropic fuses dancehall reggae and rapso along with dance and afrobeat.
Really loving Oi Oi Oi here is the Recording
Listen to all songs on their Myspace especially Drop the Count, can somebody say roadmarch.

Parrots
As a designer I’ve seen the recent over kill of birds, in fashion, interiors, wall stickers, stencils, giftware etc. They can be seen perch on your shoulder, flying over your head adorning walls and window displays everywhere, but have you notice it’s the usual quaint English swallows, robins and wrens.
Its now time for the tropics, beautiful hummingbirds, parrots, scarlet ibis with vivid bold colours all native to the islands of the Caribbean.
Continuing the trend Tribe carnival band has just launch their presentation for Trinidad 2009 based solely on tropical birds (check saucy carnival blog for pics of launch).

So a few months back I was pleased to see in the Tiger shop in Hammersmith this £2.00 scarf. I loved the parrots placed among the oversized lush tropical leafs. Last week I decided to knock up this skirt.

Bell & Howell
Having a dig around in my Dad’s shed I came across his Bell & Howell old 8mm movie camera. I had forgotten how it looked in this digital age.
In the 70s and 80s family movies was the dun thing, me,my sister and my cousins use to feature in the staring rolls using 8mm tape.
When you recorded your film you then had to use a projector and a pull down screen to watch. We also used to watch old Black and white films such as King Kong as this was the original VHS.
The song that went with the camera:

The Antilles
I am currently inspired by all things tropical at the moment and wishing I was on Macaroni beach Mustique. I found these vintage travel posters here.
I love the colour palette of bold blues with pastel fonts and simplified shapes.
